Italian Sausage / Pasta Bake
Boil some pasta such as elbow macaroni or rotini... you’ll need about a 16 oz. package.
Pan fry 1 lb. mild italian sausage (pork or turkey sausage), after 3 minutes, add in 1 C chopped onion, 1-2 finely chopped garlic pods (or 1/2 tsp. garlic powder), 1 package (8 oz.) mushrooms & some Italian herbs seasoning. After another 3 minutes add in one big can (about 24 to 28 oz) crushed tomatoes, stir then add at least 3 C fresh spinach leaves (frozen is o.k., too). Once every thing is nearly cooked, add in a little salt, 1 C mozzarella cheese and 1/2 C Parmesan Cheese (grated) - combine and transfer to glass baking dish. Sprinkle another 1/2 C grated cheese over the top and bake at 350 for 15 minutes until it is bubbly and cheese is melted.
Serve with a small salad and some warm bread!
TIP: Eat at the TABLE with your family - not in front of the TV.Dinner time should be enjoyed together as much as possible. It’s a good time to unwind and catch up with each other. When everyone is at the table, you can thank God for providing, make eye contact, speak freely and take a break from a busy day.
